  • 1 tablespoon olive oil
  • 12 cup minced onion (about 1/2 small onion)
  • 1 garlic clove, minced
  • 4 -6 cups chicken broth or 4 -6 cups vegetable broth
  • 1 (14 ounce) can whole tomatoes, coarsely chopped
  • 1 (9 ounce) package fresh tortellini or (9 ounce) package dried tortellini
  • kosher salt
  • cracked black pepper
  • 10 ounces fresh spinach or 10 ounces frozen spinach, defrosted and chopped
  • 14 cup freshly grated parmesan cheese (optional)

directions

  • In a soup pot, heat olive oil over medium high heat.
  • Saute the onion and garlic, stirring often until onions are translucent, about 5 to 7 minutes.
  • Add broth and tomatoes, turn heat up to high, and bring to a boil.
  • Add the tortellini and cook according to package instructions.
  • When tortellini is almost done, add spinach and taste, adjusting seasonings with salt and pepper.
  • Serve immediately.
  • Garnish each serving with a sprinkling of Parmesan.

  1. This was delicious, and I felt like I was doing something nice for myself eating it! Very healthy and simple. I used beef tortellinis, because my family likes them, and I had a can of stewed tomatoes. I also added a little pinch of basil and oregano. I would hold off on the cheese until you taste the soup. I like it better without. That is a matter of personal preferrence.

  2. Excellent, comforting soup that's fairly easy to put together! Not sure if any other users suggest this, but we usually make everything except for the tortellini, and then add as much tortellini as we need for the servings. The next day, assuming there's any leftovers, we heat up the base and just add more tortellinis...otherwise the pasta can deteriorate.

  5. I made this for dinner last night with grilled ham and cheese sandwiches. (I have a husband who prefers soup and sandwich suppers to just about anything else.) This soup was delicious and superfast and easy. I used Muir Glen fire roasted tomatoes, which added a nice smoky flavor, and packaged fresh spinach. A definite keeper!

  1. This sounded like it would be a little boring, so I made three adjustments: - added more garlic (six were fine, but I like garlic - added some fresh basil. If it wasn't on hand, I would have added an Italian herb mix - added about 3/4 cup white wine. Hope this helps.

  2. I doubled the garlic and onion..and used a 28 oz can of tomatoes also we like a bit of spice…..so added a good long squirt of Sriracha…it enhanced the flavour and gave it a nice little kick!

  3. Made this soup with a few add-ins and it was amazing! I wanted a really hearty soup so I added a medium carrot & a 14 oz can of white beans (rinsed). Also used diced tomatoes instead of the whole tomatoes, and vegetable stock instead of broth (just because these are what I had on hand) and sprinkled some Italian seasoning after adding the broth. Just eyed it when I was adding the spinach as I already had a bunch in here. Definitely didn’t use as much as the recipe calls for Loved it!! Can’t wait to eat the leftovers!

  4. What a great recipe. I made this for DH and myself for supper tonight and we really enjoyed this. I did add a pound of mild italian sausage browned up and used tomato sauce in place of the whole tomatoes (thought I had some but didn't)and I used cheese tortellinis. We loved the soup and I know my kids will too. I'm already looking forward to lunch tomorrow for the leftovers. Thank you for sharing this with us.

  5. This soup was excellent I made it to accommodate another pasta dish I was making my boyfriend and I ended up giving him the pasta and eating the rest of the soup!!! I only changed a couple things other than that it was PERFECT! I added a little less spinach than what they called for I felt like that was too much than I did one can of halved tomatoes and than one can of diced tomatoes I love tomatoes and I also added about 1/2 cup to 1 cup of tomato juice instead of just vegetable broth. I also added italian seasonings and fresh basil! I hope you enjoy it as much as we did!
